Olive oil and frying
According to an old belief, extra virgin olive oil is not suitable for frying because it does not tolerate high temperatures well. However, this belief is untrue.
Thanks to its natural abundance of monounsaturated fatty acids, extra virgin olive oil can withstand high temperatures better than many other oils. Studies have shown that olive oil does not soak into food during frying, but remains on its surface, while all other fats soak completely into the food. Oleic acid also does not change as a result of heating.
